Blow Your Mind Southwest Chicken & Squash Lettuce Wraps

I am starving and my brain hurts from my second week of grad school. Going back to school at age 46 may possibly be my greatest challenge yet. But I am so up for it. I really, really want this!! Between getting my Master’s in Exercise Science, juggling a business and family, I am uber busy! To save myself some time, I bought an already prepared all natural roasted chicken. Further proof that even really busy people can still prepare and cook most of their own meals even with unexpected barriers. Did I mention that I did all this in about 20 minutes with a really cute grandbaby running over my bare feet with her walker, Ouch! lol! I also have a small garden in my front yard so most of my recipes are inspired by what is already on hand. Today I have 3 yellow crookneck squash and a jalapeno from the garden. Instructions: Sautee small onion until golden then throw in diced garlic, diced jalapeno and diced yellow squash and a can of diced green chilis. Add Mexican spice blend: Chili powder, garlic powder, cumin, smoked paprika, pepper, onion powder, garlic salt and oregano. Then simmer until done. Add shredded grass fed cheddar cheese. Garnish with olives and avocado. Can eat in a lettuce wrap or on a bed of greens. Or indulge in a sprouted grain organic corn tortilla. Yummy, I’m starving! Time to eat…
